Square Decking the Block makes for consistency of the compression ratio in each cylinder. The deck of the block over time is subject to warpage from heat cycles. Surfacing the block insures proper head gasket sealing. It’s also important to note that proper surface finish is incredibly important. Typical callout of a modern MLS gasket is around 30Ra. Days of composite gaskets that allowed for rougher finishes are gone. The MLS gasket is a spring basically that is able to expand and contract with different materials.
